The metastable range of supersaturated aqueous solutions of D-fructose

Abstract: The probable limit of the metastable range of the oversaturated solutions of D-fructose is expressed on the basis of determination by an empirical quadratic function valid from 20.0 to 60.0 °C. In accord with the probable limit of the metastable range of oversaturated solutions of D-fructose the favourable conditions for growing crystals of ß-D-fructose lie in the 0 to approximately 35 °C range.
