The level of SH group and free L-ascorbic acid in vegetables and fruits

Abstract: By a polarographic method SH groups expressed as SH-glutathione and free L-ascorbic acid are detd. in 44 vegetable and fruit varieties from Zitn´y ostrov near Bratislava. Vegetables contg. L-ascorbic acid also contain a considerable amt. of SH group usually found in young green leaves of spinach, lettuce, cabbage, kale and parsley. In most of the fruit (plums, apricots, pears, apples, cherries) the amts. of SH-glutathione and L-ascorbic acid are negligible.
