Free amino acids in some varieties of commercial cheese

Abstract: Seventeen varieties of domestic com. cheese, including some goat cheeses produced in Slovakia, were analyzed for free amino acids by 1-dimension paper chromatography. The presence and concn. of 21 free amino acids was detd., with the highest concn. of alanine up to 12.42 and valine up to 2.66 mg./g.
