The increase of yield in the production of starch from potatoes

Abstract: There may be a loss of 1.8% starch in potatoes contg. 17.7% starch. The yield can be increased if the shredded potatoes after the first ext. are treated with 20% NaOH so that pH is brought up to 7.4 to 8.0.
