Determination of pectolytic activity on a synthetic substrate

Abstract: The detn. of pectolytic activity on the natural substrate (dild. apple juice) was difficult. Exptl. a synthetic substrate, pH 3.8, was developed which contained 0.3% tartaric acid, 0.4 NaNO₃, 0.05 catechol, 0.2 Na benzoate, 0.2 pectin and H₂O to make up 100.00%, which gave results comparable to the natural juice, but without variations assocd. with the latter.
