Effect of tannin on the reaction of pectin with gelatin

Abstract: The flocculating reactions in the system pectin-tannin-gelatin in relation to wt. ratios of gelatin:pectin, of tannin:gelatin and in the relation to pH and concns. of KCl and FeCl3 were described. Insol. complexes of pectin, tannin, and gelatin were formed at values of wt. ratio of tannin:gelatin <2. The amt. of the pectin in the ppt. decreased with an increasing concn. of tannin. At a wt. ratio of tannin:gelatin >2, the ppt. contained only complexes of tannin and gelatin. In the presence of KCl and FeCl3, the amt. of pptd. pectin was decreased, but the amt. of tannin and gelatin in the ppt. was almost const.
