Qualitative determination of other substances in commercial pectins

Abstract: Qual. chromatographic, electrophoretic, and ultraviolet spectrophotometric analyses of other substances present in com. pectins were carried out. French pectin contains a relatively large quantity of galactose. The ultraviolet spectra of H2O and EtOH extns. of Bulgarian and Czechoslovak pectins are the same, but the paper chromatography and electrophoresis analyses show substances in motion present in Czech and none in Bulgarian pectins. The substance in Czech pectins was identified as chlorogenic acid (I) which is also found in Swedish sugar beet pectin. In addn. to I other polyphenolic substances were found in Czech pectins classified in 3 groups according to their ultraviolet absorption spectra: (1) without ο-dihydroxy structure; (2) with ο-dihydroxy structure with (a) those resembling I and (b) those coupling with diazonium salts, and (3) other polyphenolic substances. By evaluation of these analyses the origin of com. pectins can be detd.
